Creepy Vampire Heart Salad

This salad is so creepy it will make you want to rip your heart out. Well, maybe not that creepy, but it defiantly will have your guest questioning if they are about to devour a real organ - making it absolutely perfect to serve at your Halloween Dinner Party!

Goat cheese salads have always been my favorite way to get in my greens. Throw in some salty meat, fruit, nuts and sweet dressing and I am one happy girl. To pair this salad, I undoubtedly choose a Sancerre. Goat Cheese and Sancerre is like peanut butter and jelly, they are simply meant to be served together.
Eat your heart out folks, this one is killer.
Ingredients (makes 2 salads):
6 Dates
6 Strips of Prosciutto
Argula
Goat Cheese Crumbles
Any other desired toppings like nuts, red onions or fruit
Slice dates 1/2 way down the middle. Squeeze the dates and shaped them in to a heart.

Wrap the date with prosciutto and secure with a wooden toothpick. Place on top of a arugula and goat cheese salad with desired toppings.
Dressing:
1/4 c. Balsamic Vinegar
1/4 c. Red wine
3 tbsp. Pomegranate Juice
1/2 tbsp. Dijion Mustard
Salt and pepper to taste
Bring Balsamic Vinegar and red wine to a boil. Cook for 2 minutes. Reduce heats and stir in pomegranate juice and Dijon mustard. Drizzle over salad!
